A Dream Come True

Hayley Crawford is a hometown favorite in Weston, Missouri. If you know Weston, you probably know Hayley. From a young age, she was working in the kitchen with her mom, and she loved going with her dad to the farmer’s market in Kansas City. She especially looked forward  to the food vendors where she and her dad began to dream of opening a meatball sub stand. Hayley’s dad’s love of hosting people and grilling soon became her trademark.

When she left Weston to attend Mizzou, her plan was to study business. In the meantime, she was always cooking and entertaining for her friends. It took two years to the figure out that business wasn’t her thing; it was food.

With her heart set on becoming a chef, she packed up and moved out of state to attend the Art Institute of Chicago where she earned a bachelors degree in Culinary Arts. After graduation, her dad’s health began to fail. She  moved home where she continued to feed the people she loved and entertained her friends on the regular.

Her heart was full as her family grew, but she always dreamed of opening a restaurant. During that season she made cakes and pastries for events and perfected her craft at home. A major shift in her life created the opportunity to open a food truck, and she jumped on it. Ever the over-achiever, she worked hard to support herself and her three little ones. Hayley’s amazing network of friends and family surrounded her, and she launched Hayley’s Food Truck where she served coffee, pastries, and breakfast.

The food truck business was flourishing, and her dreams were being realized until a catastrophe closed the truck’s doors permanently. Again her community rallied and raised enough money to open a brick and mortar restaurant in Weston, Missouri, Hayley’s Eatery.

Hayley’s affection for community inspired the family-style seating in our restaurant. Most days you’ll find at least a dining table crowded with regulars and Weston locals catching up with a cup of coffee and Hayley’s notorious breakfast.

If you stop in for lunch, or one of our homemade pop tarts, you may have the pleasure of seeing one of Hayley’s three kids running around the restaurant. You may even meet her mom and step-father, Susie and Alan. Don’t be shy about introducing yourself to our friendly staff because at Hayley’s, you belong.
